Ingredients
- 22 whole small red potatoes, halved
- 2 cups water
- 3/4 tsp salt
- 3 sprigs of thyme
- 3 garlic cloves
- 3 tbs unsalted butter
- 1 tsp lemon juice
- 1/4 tsp black pepper
- 2 tbs chives

Preparation
Step 1
Place potatoes cut side down in a pan; add water, thyme, garlic, butter and salt; put on medium high heat and bring to a simmer; reduce heat and cover for about fifteen minutes.
Test with knife for doneness.
Uncover and fish out garlic cloves and thyme. Crank up heat to medium high and simmer uncovered for about 15 to 20 minutes until water has evaporated and you will hear butter start to sizzle.
Mince garlic cloves; add lemon juice and pepper and mix together. Add chives at end and mix.
Add mixture to pan with potatoes are browned.
