Hot water pound cake

Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 1/2 cup boiling water
  • 3 eggs
  • 3 cups flour
  • 2 tsp baking powder
  • pinch salt
  • 1/2 cup milk
  • 1 tsp vanilla
  • 1 tsp lemon extract

Preparation

Step 1

Combine butter, sugar and boiling water. Beat well. Slowly stir in 1 cup flour, then 1 egg, until used, adding baking powder and salt to last of flour. Add milk and flavourings. Bake in 300°F oven for 1 1/2 hours. Makes 2 loaf cakes.
