Ingredients
- 2 cups Buttermilk
- 2 eggs separated
- 2 cups flour
- 1 tsp soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tsp sugar
Preparation
Step 1
Sift together flour, baking soda and baking powder. Add sugar and alt and stir.
Beat egg yolks and buttermilk in large bowl. Add to dry ingredients and mix well.
Beat egg whites until stiff.
Fold in stiffly beaten egg whites and fold into batter. Batter will be quite thick.
grease each spot with crisco before putting in batter.
Spoon into aebleskiver pan (only to top, otherwise it will overflow) and cook until brown on both sides. You'll have to turn with a toothpick. The pan can't be too hot or the middle won't cook. You can put fruit or jam or chocolate in the middle before turning them over. Serve with powdered sugar, jam or syrup.
