  • 2 c light bisquick
  • 1/4 c splenda
  • 1 lemon zested juiced and divided
  • 2 large eggs
  • 2/3 c low fat buttermilk
  • 1/4 c canola oil
  • 1/2 chopped fresh cranberries
  • 1/4 c dried cranberries

Preparation

Step 1

heat oven to 350
beat on med speed bisquick sugar and 1 t lemon zest 30 sec
add next 3 ingredients and 1 T lemon juice-beat 1 min till smooth-add fresh and dried cranberries-spoon batter in loaf pan-bake 50 mins till done-cool in pan 10 mins-remove and cool completely
