Zucchini Bread with Applesauce

Recipe calls for 2 cups grated zucchini, but I had a LOT of zucchini so I put in 4 cups and it was still great. Added the cloves and nutmeg and loved that too.

Ingredients

  • 3 eggs, beaten
  • 1 cup unsweetened applesauce
  • 2 cups granulated sugar or 1 cup brown sugar and 1 cup granulated sugar)
  • 2-4 cups grated zucchini squash
  • 1 tsp vanilla
  • 3 cups flour
  • 1 tsp salt
  • 3 tsp cinnamon
  • 1/4 tsp cloves
  • 1/2 tsp nutmeg
  • 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1 cup chopped pecans.

Step 1

Combine eggs, applesauce and sugar until well blended. Stir in zucchini and vanilla.

Sift together flour, salt, cinnamon, cloves, nutmeg, baking powder, baking soda; stir into zucchini mixture.

Stir in chopped nuts.

Bake in 2 will-greased loaf pans or 4 small loaf pans AND one 12 mini muffin pan for 350 degree F. (one hour for large loaf pans; 45 minutes for mini muffin pan, add 12 minutes to finish of the 4 mini loaf pans - check for doneness when muffins are done.)
