Banana Pineapple Ice
- 2 cups unsweetened apple juice
- 2 cups mashed ripe bananas
- 1 - 8 ounce can unsweetened crushed pineapple, undrained
- 2 tablespoons lemon juice

In a large bowl, combine all ingredients. Pour into an 8 inch square dish. Cover and freeze for 1 1/2 - 2 hours or until almost firm. Remove from freezer and transfer mixture to a large bowl. Beat for 1-2 minutes or until smooth and creamy. Return mixture to square dish and freeze until firm. Remove from the freezer at least 30 minutes before serving.
Makes 10 servings
Tip: If your bananas are not ripe enough, place them in a paper bag to speed the process.
