Everyone needs a go-to muffin recipe for special mornings. Start with one great basic recipe and add extras for four delicious variaitons. Try then all!!

Ingredients

  • Base
  • 3/4 c all-purpose flour
  • 1/2 c white whole-wheat flour
  • 1/2 c sugar
  • 1 1/4 t. baking powder
  • 1/4 t. ground nutmeg
  • 1/2 t. salt
  • 1 large egg, lightly beaten
  • 3/4 c. soy milk
  • 2 Tbnsp vegetable oil
  • 1 t. pure vanilla extract
  • MIX INS: STIR IN THESE INGREDIENTS WHEN YOU GET TO STEP 3
  • Double Chocolate Cherry
  • reduce all-purpose flour in base to 1/2 c.
  • 1/2 c. semisweet chocolate chips
  • 1/2 c. dried cherries
  • 1/4 c. unsweetened cocoa
  • (add to flour mixture)

  • Cinnamon-Apple Walnut
  • 1/2 c chopped dried apples
  • 1/2 c. chopped walnutys
  • 1 tbsp sugar + 1/2 t. cinnamon for topping

  • Apricot-Pistachio
  • 1/2 c. chopped dried apricots
  • 1/2 chopped pistachios
  • 2 tbsp shredded unsweetened coconut for topping

  • Blueberry
  • 1 c. fresh blueberries
  • cal 121; fat 3.2g (salt 0.4mg; mono 0.7g poly 1.8g) chol 16 mg; prot 3g; carb 21g; sugars 10g; fib 1g; RS 0g; sod 172mg

Preparation

Step 1

Preheat oven to 400. Line a 12 cup muffin pan with paper liners.
Combine flours and next 4 ingredients (through salt) in a large bowl; stir with a whisk,. Make a well in center of mixture.

Add egg, milk, oil, and vanilla to flour mixture, stirring until just combined. Stir in mix-in ingredients. Divide batter evenly amoung prepared muffin pan. Add topping as indicated.

Bake 16-20 minutes or until a wooden pick inserted in the center of a muffin comes out clean. Cool in pans on a wire rack for 5 mintues, remoe muffins from pans and cool completely on rack.
