Butter Pecan Banana Cake

Ingredients
- 1 box (18 1/4-oz.) butter pecan or yellow cake mix
- 1 cup mashed bananas (about 2 medium)
- 1/3 cup vegetable oil
- 3 large eggs
- 1 1/2 cups chopped pecans, divided
- 1/2 cup firmly packed light brown sugar
- 1/2 cup (1 stick) butter
- 1/4 cup whipping cream
- 2 1/2 cups confectioners’ sugar
- 1 teaspoon vanilla extract
Preparation
Step 1
Preheat oven to 350°F. Grease and flour a 13- x 9-inch baking pan. Combine the cake mix, 1 cup water, the bananas, oil and eggs in a large bowl. Beat with an electric mixer set on high speed for 30 seconds. Reduce speed to medium and beat for 2 minutes, scraping bowl occasionally. Stir in 1 cup pecans. Pour into the prepared baking pan.
Bake until a toothpick inserted in the center comes out clean, 30–35 minutes. Cool in panon a wire rack.
Combine the brown sugar, butter and cream in a medium saucepan. Cook, stirring constantly, over medium heat until the mixture comes to a boil.Boil for about 30 seconds.
Remove from heat. Add the confectioners’ sugar and vanilla. Beat with a wire whisk until smooth. Pour the warm frosting over the cake and quickly spread until smooth. Sprinkle with the remaining pecans. Let cool completely before serving.
