Butternut Squash Casserole

Ingredients

  • 2 cups cooked and mashed butternut squash
  • 3/4 cup sugar
  • 2 T tapioca pudding
  • 1/2 stick butter
  • 2 cups milk
  • 2 eggs
  • 1 tsp vanilla

Preparation

Step 1

Cook halved butternut squash, face down, in a pan of water (level about 2 inches) at 450 degrees until done. Scoop out squash.

Combine ingredients in bowl. (Mixture will be soupy.) Pour into casserole dish. Bake at 350 for 1 hour or until set in middle.
