Ingredients
- 2 cups powdered sugar
- 1 1/2 tablespoons soft, unsalted butter
- 1/4 teaspoon corn or vegetable oil
- 1/4 teaspoon vanilla extract
- 2 tablespoons half and half
- 2-4 drops peppermint extract
- 1 drop red food coloring
- 1 cup semi-sweet chocolate baking chips
Preparation
Step 1
In the bowl of a stand mixer, beat together sugar and butter.
In a small bowl, stir together oil, vanilla, half and half, food coloring, and peppermint.
With mixer on low, drizzle in liquid and blend until pink and firm.
Remove batter and make a ball.
Wrap in plastic wrap, flatten to a disk, and refrigerate for 1 hour.
Remove from fridge and quickly roll chunks of dough to 1 inch balls.
Place on wax paper-lined baking sheet.
Dip clean finger into powdered sugar and flatten balls to 1/4 inch.
Place in freezer for 1 hour.
Melt chocolate on stove top, being careful not to burn.
Drop tough disks one at a time into chocolate, turn with fork, and place back on wax paper.
Refrigerate until chocolate is firm (1 hour+) or keep refrigerated
