Yellow Rice

Ingredients

  • 1 1/2 tbsp olive oil
  • 1/2 cup finely diced onion
  • 1 tsp chopped garlic
  • 1 cup long grain converted rice
  • 2 cup low-sodium chicken stock
  • 1 tsp ground turmeric or annatto (achiote)
  • 1/3 cup diced pimiento
  • 1/2 tsp kosher salt

Preparation

Step 1

1. In a large saucepan, heat olive oil over medium heat. Add onion and garlic; cook 3 minutes.

2. Add rice and stir, 3 minutes. Add chicken stock and ground turmeric or annatto (achiote) and bring to a boil; cover, reduce heat to low, and cook 20 minutes.

3. Stir in diced pimiento and salt; fluff with a fork. Remove from heat; leave covered.

Fluff again before serving.
