Raisin Filled Cookies

Ingredients
- For Cookie:
- 1 cup sugar
- 1/2 cup butter
- 1 egg
- 1/2 cup milk
- 1 tsp vanilla
- 3 1/2 cups flour
- 1 tsp baking soda
- 1 tsp cream of tartar
- For Filling:
- 2 Tblsp flour
- 2 Tlsp lemon juice
- 1 cup + 1 Tblsp water
- 2 cups raisins
- 1 cup sugar

Step 1
For Cookie:
In a large bowl cream sugar and butter. Stir in egg, milk, and vanilla. Add flour, soda, and cream of tartar. Roll into large ball and set aside.
For Filling:
Blend flour, lemon juice, and 1 Tblsp water. In saucepan over med heat combine raisins, sugar, and remaining water. Add flour mixture and stir until thick. Set aside to cool.
Roll out cookie dough until very thin. Using cookie cutter or upside down glass, cut the dough into about 60 small circles. Spoon 1 heaping tsp of raisin filling on top of half of the dough circles. Cover each with another circle and seal edges with fingertips. Bake at 350 degrees for 12-15 minutes until light golden.
