Chicken and Artichoke Saute

Ingredients

  • 2 T oil
  • 1 chicken, quartered (2 1/2 to 3 lbs)
  • 1 med onion
  • 1 envelope Lipton Herb with Garlic Soup Mix
  • 1 1/2 c water
  • 1 15-oz can artichoke hearts, drained

Preparation

Step 1

In 12-in skillet, heat 1 1/2 T oil over med-hi heat and brown chicken. Remove and drain. In same skillet, add 1/2 t oil and cook onion 2 min. Stir in soup already blended soup mix and water, bring to boil. Return chicken, add artichokes. Reduce heat to low and simmer covered 20 min or til chicken is done.
Serve over rice, couscous or noodles.
