Tortellini Soup

Ingredients

  • 2 pkg mild italian sausage
  • 2 cups chopped onion
  • 2 cloves garlic chopped
  • 10 cups beef broth
  • 2 cups water
  • 1 TBL parsley
  • 2 cups sliced carrots
  • 2 med green peppers chopped
  • 1 cup sliced zucchini
  • 1 lg can S&W italian stewed tomatoes
  • 1 tsp basil
  • 1 tsp oregano
  • 1 6oz (or more) cheese tortellini

Preparation

Step 1

Brown sausage with onions and garlic. Add all other ingredients except tortellini. Cook until vegetables are tender and then add tortellini. Cook until tender. Garnish with parmesan cheese.
