Ingredients

  • 3 1/2 pd rump or round beef roast
  • 2 1/4 c water
  • 1 envelope onion soup mix

Preparation

Step 1

in dutch oven brown roast in a 1 or 2 T oil on all sides
blend onion soup mix and water and add to pot
Simmer covered turning occasionally 3 hours
if desired thicken gravy with cornstarch mixed with water
** Variations**
French style-decrease water to 1 1/4 c and add 1 c dry red wine & 1 t thyme
German style-decrease water to 3/4 c and add 1 12oz can of beer, 1 t brown suar and 1/2 t caraway seeds
Italian style-decrease water to 1 cup
add 1 can (14 1/2 oz) whole peeled tomatoes drained, 1 t basil and 1 bay leaf
