Chocolate Sherry Cream Bars

Ingredients

  • 1 1/2 cup butter, softened
  • 4 ounces unsweetened chocolate
  • 4 eggs slightly beaten
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 1 cup flour
  • 4 cups sifted powdered sugar
  • 1/4 cup half and half
  • 1/4 cup sherry or other liqueur
  • 1 cup chopped walnuts
  • 4 teaspoons sherry or water
  • 2 tablespoons butter
  • 1/2 cup semisweet chocolate pieces

Preparation

Step 1

Preheat the oven to 350 degrees.

Grease a 15 x 10 x 1-inch baking pan; set aside.

For the crust:
In a saucepan over low heat, melt one cup of the butter and the unsweetened chocolate. Remove from the heat.

Stir in the eggs, granulated sugar and vanilla; beat lightly until just combined. Stir in the flour. Spread the mixture into the prepare pan. Bake in a preheated oven for 25 minutes. Cool. The crust will be moist.

For the filling, in a large bowl, combine the powdered sugar and 1/2 cup butter. Beat with an electric mixer until combined. Gradually add the half and half and the 1/4 cup sherry; beat well. Stir in the nuts.

Spread the filling over the crust. Chill until firm.

For the topping, in a small saucepan melt the chocolate pieces and 2 tablespoons butter over low heat. Stir in the 4 tablespoons sherry or water until smooth.

Drizzle the topping over the filling. Chill till the mixture is set, but not firm. Wtih a knife, score the top to outline bars. Chill till firm, then cut into bars.
