Cafe Sabor Chicken Tortilla Soup - Cathy Johnson

Ingredients

  • 2 skinless, boneless chicken breasts
  • 1/2 tsp minced garlic
  • 2 (14.5 oz) cans of chicken broth
  • 1 cup chopped onion
  • 1 TBL lemon juice
  • 8 oz corn tortilla chips
  • 1/2 tsp olive oil
  • 1/4 tsp ground cumin
  • 1 cup frozen corn
  • 1/2 tsp chili powder
  • 1 cup chunky salsa(my green tomatillo worked great)
  • 1/2 cup shredded monterey jack cheese

Preparation

Step 1

In a large pot, saute the chicken in the oil until cooked. Add the garlic and cumin then mix well. Add broth, onion, corn, chili powder, lemon juice and salsa. Simmer for 30 minutes.

Serve: Break up a few tortilla chips and pour soup over chips. Top with cheese and a little sour cream.
