Ingredients
- MUFFINS
- 2 C FLOUR
- 1/2 C SUGAR
- 1 T BAKING POWDER
- 1 T cinnamon
- 1/2 t SALT
- ZEST OF 1 LEMON
- 1 C MILK
- 1 EGG
- 2 T VEGETABLE OIL
- 1 t VANILLA
- 1 C FRESH BLUEBERRIES
- TOPPING
- 2 T BROWN SUGAR
- 2 t CINNAMON
Preparation
Step 1
IN A LARGE BOWL, STIR TOGETHER FLOUR, SUGAR, POWDER, CINNAMON, SALT AND LEMON ZEST. IN SEPERATE BOWL WHISK TOGETHER MILK, EGG AND OIL. ADD LIQUID INGERDIENTS TO DRY, THEN STIR JUST UNTIL MIXED. SITR IN BLUEBERRIES.
IN A SMALL BOWL MIX BROWN SUGAR AND CINNAMON.
HEAT SKILLET , SPRAY WITH COOKING SPRAY, REDUCE HEAT TO LOW. LADLE BATTER INTO THE SKILLET USING ABOUT 1/4 TO 1/3 CUP PER MUFFING. SPRINKLE WITH TOPPING. COVER AND COOK ABOUT 6-8 MINUTES OR UNTIL BROWNED AND THE BOTTOM. FLIP EACH MUFFIN OVER LIKE A PANCAKE AND COOK ON OHTER SIDE UNTIL BROWN, ABOUT 2-3 MINUTES.
