ONION SOUP

Ingredients

  • 4-5 large onions (4-5 cups minced)
  • 3 tablespoons butter or margarine
  • 1.4 teaspoon peppercorns coarsely crushed
  • 1 tablespoon flour
  • 3 can (10.5 ounces each) condensed beef broth
  • 3 cups water
  • 1 bay leaf
  • 6-8 slices french bread, toasted
  • 1/2 cup grated Swiss cheese

Preparation

Step 1

Slice onions and mince them. Heat butter or margarine in heavy saucepan over medium heat. Add onions and peppercorns, cook stirring frequently until onions are light brown. Sprinkle onions with flour. Cook 1 minute, stirring constantly. Add beef broth, water, and bay leaf. Bring to a boil. simmer 30-40 minutes. Discard bay leaf. Correct seasoning. Turn soup into oven-proof soup tureen. Place toast slices on top. Sprinkle with cheese. Place under broiler or in 400 degree oven until cheese turns golden brown. Makes 6-8 servings.
