Ingredients
- For Brine:
- 1/2 cup brown sugar
- 1/4 cup kosher salt
- 2 cups hot water
- 4 cups ice
- juice and rind of 2 oranges and 1 lime
- 4 bone in pork chops (6oz each)
- For Rub:
- 2 Tbsp paprika
- 1 Tbsp dried oregano leaves
- 2 tsp ground cumin
- 1 tsp red pepper flakes
Preparation
Step 1
Dissolve sugar and salt in hot water in a large resealable plastic bag; stir in ice cubes, citrus juices; and rinds. Submerge chops in liquid, squeeze out air and seal; refrigerate 1-2 hours. Preheat grill to medium high; remove chops from brine and pat dry with paper towels.
Combine spices for the rub and coat both sides of the brined chops. Grill chops to an internal temperature of 140, 3-5 minutes per side. Remove from grill and let rest 5 minutes.
