Sister Ann's Sweet & Sour Pork

Ingredients

  • Marinade:
  • 2 lbs. pork loin with fat trimmed, cut into small pieces
  • 1 onion, sliced lengthwise
  • 1 red pepper, sliced into strips
  • 1 small can pineapple chunks, juice reserved
  • 1/2 cup ketchup
  • 1 1/2 Tablespoons sugar
  • 1 Tablespoon vinegar
  • 1 Tablespoon cornstarch mixed in 1 Tablespoon water

  • 1 Tablespoon soy sauce
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 teaspoon cornstarch

Preparation

Step 1

Place pork into marinade and set aside.

Heat 2 Tablespoons vegetable oil in a hot wok or large skillet and brown pork pieces. After browning lower the heat, cover and cook for approximately 25 minutes, stirring frequently.

Remove pork and drain all but 1 Tablespoon of the oil from the wok. Saute onion and red pepper for two minutes. Add the pineapple chunks and mix well.

Return pork to the wok and cook for a minute or two, combining well.

Combine the ketchup, sugar, vinegar and reserved pineapple juice and add to the pan, mixing to flavor all the ingredients.

Thicken the sauce by adding the cornstarch and water mixture and stir until the sauce heats and the contents of the pan are well combined.

Serve over steamed rice.
