Ingredients
- 4 ears of corn or 2 cups, remove from cob
- 2 TBSLP.butter, unsalted
- 1/2 lemon juice
- 1 oz. feta, coarsely chopped
- 2 large basil leaves, torn into small pieces
- Paprica for sprinkling
- Salt/Pepper
Preparation
Step 1
Heat a small skillet on medium heat and melt the butter. Toss in the corn and saute for 2-3 minutes. Juice half a lemon over the corn as it sautes and season with salt and pepper. Stir for another 2 minutes then transfer to a small serving dish. Toss the corn with feta, torn basil and sprinkle a little paprika on top. Serve.
