Ingredients
- 1 lb fingerling potatoes
- 2 Tbsp olive oil
- 1 Tbsp white wine vinegar
- 1 tsp minced fresh thyme
- Salt, pepper, and red pepper flakes to taste

Step 1
Preheat grill to medium.
Boil potatoes in a large pot of salted water until nearly tender, 15 minutes, or prick potatoes and place in a microwave safe covered casserole dish, cover with water, add salt and microwave on high 10-15 minutes until nearly tender.
Drain potatoes. Grill potatoes until marked, about 5 minutes, turning occasionally.
Combine oil, vinegar, thyme, and seasonings in a large bowl. Add warm potatoes and toss to coat.
