New Potatoes and Ham in Browned Butter

Ingredients
- 1 T butter
- 1-lb small new red potatoes washed and quartered
- 6 T water
- 1/2 t salt
- 1-1/2 lb fresh asparagus cleaned and cut into 2inch pieces
- 1 t finely chopped fresh garlic
- 1 3/4 lb slice deli honey ham cubed
- 1/3 c butter
- 1/4 c chopped fresh chives
- 1/4 t lemon pepper seasoning

Step 1
Melt 1T butter in 12 inch skillet until sizzling; add potatoes. Cook over medium-high heat until potatoes start turning brown 5-7 minutes. Add 4T water and salt; reduce heat to low. Cover and cook 7 minutes. Add remaining water, asparagus and garlic. Cover and cook until potatoes and asparagus are crisply tender 5-6 minutes. Stir in ham; continue cooking until heated through 2 minutes.
Meanwhile melt 1/3c butter in 1qt saucepan over medium heat. Continue cooking, stirring constantly and watching closely until butter foams and just begins to turn golden 3-4 minutes. Remove from heat.
Place potato mixture in serving bowl. Pour browned butter over potatoes. Sprinkle with chives and seasoning if desired; stir to combine.
Potatoes should be 1-1/2 to 2 inches in diameter.
