Mom’s Old Fashioned Coffee Cake

Ingredients

  • Streusel Nut Topping:
  • 1/4 cup firmly packed brown sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 tablespoon melted butter
  • 1/2 cup chopped walnuts
  • Cake:
  • 1/4 cup canola oil
  • 1 egg
  • 1/2 cup milk
  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Preparation

Step 1

Preheat oven to 350 degrees F.

Grease an 8 x 8-inch baking pan and set aside.

Make the Streusel Nut Topping:
In a small mixing bowl, combine brown sugar, flour and cinnamon with a fork. Add nuts and stir to combine. Add melted butter and stir to combine (mixture will be crumbly); set aside.

Make the Cake:
In a separate medium-sized mixing bowl, sift flour, granulated sugar, baking powder and salt; set aside.

In a third (larger) mixing bowl, crack egg and beat egg until frothy. Add oil and milk and whisk to combine. Add sifted dry ingredients to wet ingredients; mix well (batter will be thick). Pour into prepared baking pan and spread evenly in pan with spatula. Sprinkle with streusel nut topping.

Bake in preheated oven for 30 minutes, until toothpick inserted in center comes out clean.

Remove from oven, cool slightly and cut into 9 equal-sized squares. Serve warm.
