The Best Blueberry Muffins

Ingredients

  • Non stick cooking spray
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 tsp. baking powder
  • 1 cup whole milk or buttermilk
  • 1/3 cup canola or vegetable oil
  • 2 eggs
  • 1 cup fresh or frozen blueberries

Preparation

Step 1

Preheat oven to 425F. Line 12 cup muffin pan with liners or spray with cooking spray.
Combine flour, sugar and baking powder. In a seperate bowl, whisk together buttermilk, oil and eggs. Pour the wet ingredients over the dry ingredients, and add the blueberries while continuously mixing with a fork.
Fill muffin cups 3/4 full. Bake 15-18 minutes or until muffins are golden and springy to the touch.
