Eggplant Carbonara.....

Ingredients

  • 2 large eggplants - cubed (about 1/2 in)
  • 4 celery stalks (coarsly chopped)
  • 1 large can diced tomatoes
  • 1 can sliced & pitted black olives
  • 1 bottle sliced green olives with pimentos
  • 1 small bottle mini capers
  • 1 small can tomato sauce
  • 1 Tb. minced garlic
  • 1/2 c. red wine vinegar
  • 1/4 c. olive oil
  • Salt & Pepper to taste

Preparation

Step 1

Step 1: Sautee Eggplant, celery & capers in Olive Oil until softened.

Step 2: Add all other ingredients & simmer about 1 hour.

Step 3: Serve hot, room temperature or cold with your favorite Italian Bread
