Summer Chili

This is a simple chili recipe using summer vegetables to satisfy that comfort food craving without a crockpot.

Ingredients
- 1 tbsp of olive oil
- 1 bell pepper, chopped
- 1 onion, chopped
- 1 zucchini, chopped
- 1 tbsp of scallions, chopped
- 1 lb of lean ground beef or turkey
- 1 can of kidney beans
- 1 can of diced tomatoes
- 2 cloves of garlic
- 3 tablespoons of Chili poweder
- 1 tablesoon of Garlic Powder
- 1 tablespoon of Cumin
- 2 cups of water
Preparation
Step 1
Saute garlic, peppers, onions, scallions, and zucchini in olive oil until onions become transparent (5-10 minutes)
Put in a bowl and set aside.
Using the same skillet, cook ground beef/turkey until browned. Drain excess fat.
Combine sauteed veggies, cooked meat, canned beans(drained of liquid), and canned tomatoes in the skillet.
Add spices and water. Mix well.
Simmer for 45-60 minutes.
Top with shredded cheese, sour cream, plain greek yogurt, or enjoy as is.
