Corn/Bean Salsa

Ingredients

  • 1 can corn, drained
  • 2 cans Chipotle corn (or Mexicorn if you can’t find Chipotle), drained
  • or 2 cans regular corn and 1 can Chipotle/Mexicorn-your choice*
  • 2 cans black beans-rinsed & drained
  • 1 can petite diced tomatoes-DON’T drain
  • 1 can Rotel
  • Green onions-chopped
  • 1/2 to 1 batch Cilantro-washed and chopped
  • Fresh Jalapeno pepper-diced
  • Approx. 1/2 bottle Zesty Italian Dressing
  • Chili powder-to your liking
  • Sprinkle or two of garlic powder

Mix all together and refrigerate. Flavors meld the longer it sits. Makes BIG batch
