Roasted Red Onions w/Sage Pesto
- 1 c lightly packed sage leaves
- 1/2 c grated parm
- 3 T pine nuts
- 2 1/2 t salt
- 1 clove garlic, roughly chopped
- 1/3 c plus 2 T EVOO, divided
- 6 red onions cut into 6 wedges
Preheat oven to 425 Ina processor, pulse sage, cheese, pine nuts, 1 t saltand garlic a few times. With the motor running, add 1/3 c EVOO steadily. Puree pesto.
In a large bowl, mix onions with 2T EVOO. Arrange on a baking sheetstir occsionally and bake for 45-60 minutes. when done spoon pesto over onions.
