Roasted Red Onions w/Sage Pesto

  • 1 c lightly packed sage leaves
  • 1/2 c grated parm
  • 3 T pine nuts
  • 2 1/2 t salt
  • 1 clove garlic, roughly chopped
  • 1/3 c plus 2 T EVOO, divided
  • 6 red onions cut into 6 wedges



Step 1

Preheat oven to 425 Ina processor, pulse sage, cheese, pine nuts, 1 t saltand garlic a few times. With the motor running, add 1/3 c EVOO steadily. Puree pesto.

In a large bowl, mix onions with 2T EVOO. Arrange on a baking sheetstir occsionally and bake for 45-60 minutes. when done spoon pesto over onions.
