- 3 T paprika
- 1 T garlic powder
- 1 T brown sugar
- 1 T dry mustard
- 3 T coarse sea salt
- 1 (5 to 7 lb.) pork roast, preferably shoulder or Boston butt

Mix the paprika, garlic powder, brown sugar,, dry mustard and salt together in a small bowl. lRub the spice blend all over the pork. Cover and refrigerate fo at least 1 hr. or up to overnight. (best)
Preheat the oven to 300 degrees. Put the pork in a roasting pan and roast it for about 6 hours. An instant-read thermometer stuck into the thickest part of pork should register 170 degrees, but basically, what you want to do is to roast until it's falling apart. When pork is done, take it out of the oven and put it on a large platter. rest about 10 minutes. deglaze the pan over mediu heat with 3/4 c water, scraping with a wooden spoon to get all the goodies. reduce to about half.
pull apart the meat using 2 forks. Put into a bowl and smother with your favorite bbq sauce and a little of the pan juices. Mix well. May keep warm in roaster or crock pot for serving. (pan juices will keep the bbq sauce from sticking)
