- 1/2 teaspoon pepper
- 1/2 teaspoon ground nutmeg, divided
- 1/4 teaspoon salt
- 1 pound pork tenderloin. - fat and silver skin removed
- 1/4 cup apricot all-fruit spread
- 3 tablespoons O.J.
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1 tablespoon minced fresh ginger
- 3-5 drops of Tabasco
- 4-6 rib, but firm apricots, halved and pitted
Preparation
Step 1
1. Preheat grill to medium high heat
2. Combine pepper, half the nutmeg, and salt. Sprinkle evenly over the pork.
3. Sauce - Combine the fruit spread, O.J., olive oil, honey, ginger, Tabasco and rest of nutmeg - should get about 6 tablespoons). Measure out 3 tablespoons into a microwave safe measuring cup.
4 Place the halved apricots into a resealable bag, drizzle with the remaining (~3 tablespoons) over the apricots. Seal and gently toss - set aside.
5. Grill pork until 155 degrees with meat thermometer - 18-21 minutes. During the last 5 - 10 minutes of grilling baste on the microwaved portion of the sauce - generously and often.
6. Just before the pork is done, drain apricots and place on the edge of the grill, cut side down. Grill for 2-4 minutes or until grill marks are present. Fruit should be hot but not overcooked.
7. Let pork rest, covered, for 5 minutes, or until meat thermometer reaches 160. Heat the sauce from the apricots in the microwave (30 seconds).
8. Cut pork crosswise into 3/4 inch thick slices. Arrange grilled apricots around meat and drizzle on the sauce and SERVE IT
