UPSIDE DOWN HOT FUDGE SPONGE PUDDING

Ingredients

  • 2 tsp unsalted butter
  • 1 cup all-purpose flour
  • 1 1/4 cups granulated sugar
  • 6 1/2 Tbsps unsweetened cocoa powder
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 Tbsps unsalted butter, melted
  • 1 tsp vanilla
  • 1/2 cup packed light-brown sugar
  • 1 1/4 cups cold water or cold black coffee

Preparation

Step 1

Preheat oven to 350 degrees.

With 2 tsp butter, grease deep-dish 10-inch pie plate or other 1 ½-qt. baking dish.

In bowl, whisk flour, ¾ cup sugar, 1 ½ Tbsp cocoa powder, the baking powder and salt. Add milk, butter and vanilla. Spread in prepared pie plate.

In small bowl, mix brown sugar, remaining granulated sugar and cocoa powder until blended. 
Sprinkle evenly over top of batter.

Slowly pour the water or coffee over top; do not stir. Bake 35 minutes until top is cakey, and fudge like sauce forms on bottom. Serving warm with ice cream.
