Ingredients

  • cooking spray
  • 1 c all purpose flour
  • 1/2 c whole wheat flour
  • 1/2 c sugar or splenda
  • 1 t ground cinnamon
  • 1/4 t baking powder
  • 1/2 t baking soda
  • 1 1/2 c peeled and shredded pear
  • 1/2 c chopped fresh or frozen cranberries
  • 1/4 t lemon zest
  • 1 large egg slightly beaten
  • 1/4 c canola oil
  • 1 T granulated sugar for topping

Preparation

Step 1

heat oven to 375
coat 12 standard muffin tin cups with cooking spray.
in large bowl combine flours, sugar, cinnamon, baking powder and baking soda
in another bowl combine pear, cranberies, egg, oil and lemon zest
Add liquid ingredients to dry ingredients and stir till just moistened
fill muffin cups 3/4 full. bake for 18-20 mins
remove muffins from pan and dip tops in sugar
cool slightly before serving
