Ingredients

  • 2 sm onions, chopped
  • 1 lb fresh mushroms, finely chopped
  • 2 T butter
  • 2 eggs
  • 3/4 c milk
  • 3/4 c half & half
  • 3/4 t salt
  • 1/4 t pepper
  • 1/2 c unseasoned dry bread crumbs
  • 2/3 c shredded cheddar

Preparation

Step 1

Preheat oven to 350.
In med skillet, melt butter; saute onions & mushrooms over med-hi heat until most of liquid evaporates.
In larage bowl beat eggs slightly; mix in milk, half & half, salt, pepper & crumbs. Stir in mushroom mixture.
Place in greased 1 qt casserole. Sprinkle with cheese.
Bake 45 min or until well browned & set.
