Ingredients

  • 1/4 cup soy sauce
  • 2 tbsp fresh lemon juice
  • 2 tbsp vegetable oil
  • 2 tbsp brown sugar
  • 3 garlic cloves, pressed
  • 1/4 tsp cayenne pepper
  • 1/4 c chopped fresh cilantro
  • 2 tbsp creamy peanut butter
  • 1 tbsp water
  • 1 pork tenderloin
  • 12 bambo skewers, soaked
  • 1/4 cup dry roasted peanuts, finely chopped
  • Lettuce Wrap (optional)
  • Bibb lettuce leaves
  • Julienne carrot & radish slices

Preparation

Step 1

MARINADE
Mix together first 7 ingredients

SAUCE
Pour 1/4 cup marinade into small bowl. Add peanut butter and water.

PORK
Trim silver from pork. Slice into two pieces lengthwise. Thinly slice stepps crosswise; place in marinade. Turn to coat and marinate at least 1 hour.
Remove pork from marinade. Thread onto skewers. Grill 5-6 minutes, turning once. Outside of pork is dark brown, inside pink.Remove from grill and press one side into peanuts.
Serve with peanut sauce and lettuce wrap, if desired.
