Hearty Vegetable Lentil Stew

Ingredients

  • 2 Tbsp olive oil
  • 2 tsp garlic, minced
  • 2-1/2 cups leeks, thinly sliced
  • 3 stalks celery, thinly sliced
  • 1 cup carrots, medium diced
  • 1 cup red skin potatoes, medium diced
  • 1 (15-oz) can diced tomatoes with liquid
  • 1-1/2 cups canned pumpkin puree
  • 5 cups vegetable stock
  • 1-1/2 tsp dried oregano
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1-1/2 cups cooked lentils
  • 1 (15-oz.) can white beans, with liquid
  • 3/4 cup fresh green beans, snapped in half
  • 1/2 cup canned roasted red peppers, chopped
  • 2 Tbsp fresh sage, chopped
  • Chicken
  • 2-1/2 –3 lbs chicken pieces, skin removed
  • 2 Tbsp olive oil
  • 4 cups chicken broth
  • 1 can cream of chicken soup
  • 1 large yellow onion, chopped
  • 3 stalks celery, chopped
  • 3 medium carrots, chopped
  • 1 cup of peas, frozen or fresh
  • 1 bay leaf
  • 1-1/2 tsp seasoned salt
  • 1/2 tsp peppers
  • 1/2 tsp rosemary
  • 1/2 tsp thyme
  • Dumplings
  • 2 cups baking mix
  • 1/2 cup milk

Preparation

Step 1

Heat the olive oil over medium-high heat in a large stockpot. Add the garlic, leeks, celery, carrots, and potatoes, and sauté until the leeks begin to soften.

Add the tomatoes, pumpkin, vegetable stock, oregano, cumin, and paprika. Bring to a simmer and continue to cook about 10 minutes, or until the potatoes are tender.

Mix in the lentils, white beans, green beans, red peppers, and sage. Return to a simmer and continue to cook another 10 minutes. Serve hot.

Chicken and Dumplings Soup Recipe

Directions:

In a large skillet, sauté the chicken pieces in olive oil until brown on both sides, about 3–4 minutes on each side.

Put all the remaining ingredients, except the dumplings, in a 6-quart slow cooker and cover. Cook on high for 4–5 hours.

While the chicken and vegetables are cooking, prepare the dumplings. Mix the baking mix and milk together and form into 1" balls. Set aside.

Remove the chicken and bay leaf from the vessel. Discard any leftover bones and skin. Cut the large pieces of chicken meat into bite-size pieces.

Put the chicken back into the slow cooker and drop in the dumpling dough. Cover and cook on high for another 30 minutes.
