Applesauce Loaf Cake

We had a few friends over and had this in the sun room with coffee( that's why the odd photo:) ) Had to snap a quick photo!
Anyway It's super moist ..
Bad thing is it makes ONE loaf. Good thing is it makes ONE loaf.

Ingredients

  • 1 stick butter
  • 1 cup sugar
  • 1 egg
  • 1 1/2 cups all purpose flour
  • 1 1/2 tsp baking soda
  • 1 tsp cinnamon( I always add extra)
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1 1/4 cups applesauce
  • 1/2 tsp pure vanilla extract
  • 1/2-3/4 cups raisins( or chocolate covered raisins)
  • 1/2 cup chopped nuts ( optional)
  • 1/2 cup chocolate chips ( optional)

Preparation

Step 1

Preheat oven to 350.. Grease and flour a 9x5 loaf pan and set aside

Cream together butter, sugar till fluffy. Beat in egg.

In a separate bowl, stir together flour, soda,cinnamon nutmeg, cloves and salt. Gradually add to the creamed mixture. Beat in the Applesauce and vanilla. Fold in the raisins.

Pour into Loaf pan and bake at 350 for 60-70 minutes using tooth pick test for doneness. Cool 15 minutes in pan then remove and finish cooling. Slice and serve. Makes one loaf.
