Ingredients
- 1/2 cup extra-virgin olive oil
- 1 1/2 tablespoon extra-virgin olive oil
- Angel Hair spelt pasta
- 1 tablespoon fresh basil cut julienne style
- Freshly-ground white pepper to taste
- 1/8 cup freshly-grated Parmesan
- 2 ounces fresh black truffles

Step 1
Cook the pasta according to package instructions, adding the 1 1/2 tablespoons of olive oil. Drain well. Toss the pasta with the 1/2 cup of olive oil, half of the basil, and salt and pepper to taste. Mound the pasta in the center of two dinner plates. Sprinkle with freshly grated Parmesan. Shave the truffle over each serving of pasta, then garnish with the remaining basil.
