Santa Fe Chicken Wrap for 1

Roly Poly is one of my favorite lunch spots. I just love their wraps. My favorites are #28, #52 & #65. I've already tried my hand at recreating #52 Hickory Chicken and it was better than the original! This time I am recreating #28 Santa Fe Chicken. Roly Poly's menu describes it as Sliced Chicken Breast, Melted Jalapeno Jack Cheese, Onion, Tomato, Ranch Dressing, Grilled Golden Brown with a Side of Salsa.
I changed it up a little and left off the onion and tomato and substitued some chunky salsa instead (kind of the same, but different). We grilled some of my favorite chicken tenders the night before, and I had these on the table in no time after work. I love Sandwich night!!
We ate the wraps with some Tostitos Artisan Fire Roasted Chipotle Chips. I am in love with these chips. They are light and airy with a hint of chipotle. The chipotle flavor builds as you stuff your face with eat the chips. I cannot be trusted around these chips. YUM!
Ingredients
- 1 small tortilla
- 1 slice Jalapeno Jack cheese
- 1 1/2 grilled chicken tenders
- 1-2 tsp Ranch dressing
- 1 Tbsp chunky salsa
- Salsa for dipping
Preparation
Step 1
Lay the tortilla on a flat surface. Layer ingredients in order on tortilla starting with cheese and ending with salsa. Roll up the sides of the tortilla and place in grill pan. Top tortilla with grill press and grill until golden brown. Turn over and brown the other side. Serve with a side of salsa.
