Ingredients

  • Vanilla wafers
  • 1 pkg lemon gelatin
  • 3/4 c boiling water
  • 1 c ice cubes
  • 1 pkg cream cheese softened
  • 1/4 c sugar
  • 2 tsp lemon zest
  • 1 (8oz) tub cool whip
  • 1/3 c raspberry preserves
  • 1 1/2 c sliced fresh fruit, strawberry, blueberry, raspberry, kiwi etc.
  • If you want to turn dessert out on serving plate line 8" square pan with saran wrap, layer wafers sides and bottom.

Step 1

Mix gelatin and hot water, stir until dissolved add ice until melted. Combine next 3 ingredients, sugar, zest cream cheese and blend well. Gradually beat in gelatin mixture. Whisk in cool whip. Pour 1/2 over wafers. Put another layer of wafers. Microwave raspberry preserves and spoon over wafers. Pour remaining mixture over wafers. My variations: Put another layer of wafers, more raspberry preserves, skip fruit. OR: Turn out on serving dish put raspberry preserves on what was the bottom wafers skip fruit. Or skip extra raspberry preserves and put fruit on it. I went the cheaper way and loved the extra raspberry flavor.
