Ingredients
- 2 ears Corn (husked and silk removed)
- 1 Lime (zested and juiced)
- 2 tbsp. Italian Parsley or Cilantro - leaves only (chopped)
- 1 cup cherry tomatoes (halved)
- 1/2 Jalapeno (minced)
- 2 scallions (chopped)
- 1 clove garlic (minced)
- 1 tablespoon olive oil
- salt and pepper to taste
Preparation
Step 1
* Grill the ears of corn til charred at parts, about 3 minutes per side. Remove the kernels from the ear to a bowl, and toss with the lime zest and juice, cilantro, tomatoes, scallions, garlic and jalapeno. Add olive oil and toss to coat. Season with salt and pepper.
