Ingredients
- 6 garlic cloves
- 1/2 C olive oil
- 1/2 jalapeno chili, seeded & chopped
- 5 T chopped cilantro
- 1/4 C lime juice
- 1 T honey
- Salt & pepper
- 16 jumbo shrimp
Preparation
Step 1
1. Light grill. In small saucepan, combine garlic & 1/2 C olive oil & simmer over lo heat til garlic is golden brown, @ 8 min. Transfer garlic to processor & pour oil into glass measuring cup. Let oil cool slightly. Add jalapeno chile to processor & 1/4 C cilantro, lime juice & honey & puree. Slowly add garlic olive oil. Season with salt & pepper.
Brush shrimp with olive oil & season with salt & pepper. Grill over hot fire til lightly charred, @ 4 min per side. Drizzle with vinaigrette, sprinkle with remaining cilantro & serve.
