Ingredients
- 2-2/3 c chopped pecans
- 2 c sugar
- 3 c all purpose flour
- 1/2 tsp salt
- 2 tsp vanilla
- 1-1/4 c softened butter

- 1 c milk
- FROSTING

- 8-8 1/2 c confectioners' sugar
- 1 5oz. can evaporated milk
- 2 tsp vanilla
- remaining pecans
Preparation
Step 1
PLACE PECANS AND 1/4 CUP BUTTER IN BAKING PAN. BAKE AT 350 FOR 20-25 MIN. STIRRING OFTEN.
2CREAM SUGAR AND REMAINING BUTTER, ADD EGGS 1 AT A TIME BEATING WELL AFTER EACH ONE.
3COMBINE FLOUR, BAKING POWDER,AND SALT; ADD TO CREAM MIXTURE ALTERNATING WITH MILK; STIR IN VANILLA AND 1 1/3 CUPS OF THE TOASTED PECANS.
4POUR BATTER INTO 3 GREASED AND FLOURED 9" CAKE PANS. BAKE AT 350 25-30 MIN. AND REMOVE FROM PANS.
5FOR FROSTING
6CREAM BUTTER AND SUGAR, ADD MIK AND VANILLA; BEAT TILL SMOOTH; STIR IN REMAINING PECANS. SPREAD FROSTING BETWEEN LAYER AND TOP AND SIDES.
