Baked Potato Soup

  • 10 slices bacon - cooked and drained and crumbled
  • 1/2 cup butter
  • 1/2 cup flour
  • 3 cups milk
  • 4 cups half & half
  • 5 large cooked baked potatoes, peeled and cubed
  • 1/2 sweet onion - chopped
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 t salt
  • 1 t pepper



Step 1

Melt butter and add onions and saute until tender. Whisk in flour until smooth. Gradually stir in milk and half & half, whisking constantly until thickened. Stir in potatoes and bring to a boil.
Reduce heat and simmer 10 minutes on low. Mix in bacon, cheese and sour cream and salt and pepper. Continue cooking until cheese is melted.

8 to 10 servings.
