Ingredients
- 1 12.4 oz package (8) refrigerated cinnamon rolls with icing
- 1 C frozen blueberries, thawed and drained
- 1/3 C blueberry preserves
- 1 t shredded lemon peel
- 1/4 C chopped pecans, toasted
Preparation
Step 1
1. Lightly grease 16 muffin cups. Remove cinnamon rolls from package; set icing aside. Cut each roll in half crosswise. Press a roll half in bottom and about 1/2 in up the side of each muffin cup.
2. In small bowl, stir together blueberries, preserves, and lemon peel. Spoon filling into muffin cups. Sprinkle with pecans.
3. Bake at 375 degrees about 12 min or until golden. Cool in muffin cups on rack for 5 minutes. Remove from muffin cups and place on rack. Cool another 5 minutes.
4. Place icing from the package in small bowl. Drizzle over rolls. Serve warm.
