Fresh Morels With Apples And Butter Noodles

  • 6 tablespoons butter
  • 1 pound fresh morels
  • 1/2 cup minced shallots
  • 3 granny smith apples cored, and julienned with skin on
  • 1 dry chipotle pepper minced
  • 1 tablespoon flour
  • 1/4 cup calvados
  • 1/2 cup vegetable stock
  • 1/2 pound fresh asparagus tips
  • 1/2 pound cooked butter noodles
  • 1 teaspoon freshly-ground black pepper
  • Salt to taste
  • 1/2 cup watercress or baby mustard greens

Step 1

In a hot skillet clarify the butter. Add the morel mushrooms and saute for about two minutes. Add the shallots and saute for another two minutes. Add the apples, chipotle, and flour and continue to saute for another two minutes.

Add the calvados and flame the mixture. When the flames diminish, add the vegetable stock and bring the mixture to a boil. Add the asparagus and stir thoroughly. Add the cooked pasta and toss the combine thoroughly. Cook for about three minutes. Add the salt and pepper. Garnish with watercress.
