Ingredients
- Base
- 1 cup margarine
- 1/2 cup icing sugar
- 1 3/4 cups flour
- 1/4 tsp baking powder
- 1/2 tsp salt
- Topping
- 4 eggs
- 1 3/4 cups sugar
- 1/3 cup flour
- 1/3 cup juice
- 2 Tbsp grated lemon peel

Step 1
Base: In a medium bowl beat margarine and icing sugar with an electric mixer until fluffy. Add flour, baking powder and salt until well blended. Spread dough evenly in a 9" x 13" pan. Bake at 350°F for 20 min. Remove from oven, cool in pan.
Topping: Meanwhile, in a medium bowl, beat all ingredients about 4 minutes, using an electric mixer, until mixture is light and fluffy. Pour mixture over baked crust. Bake 25 min or until set. When thoroughly cooled, sprinkle generously with icing sugar. Refrigerate until firm. Cut into triangles.
