Mountain Man's Breakfast
- 8 eggs
- 1/4 c. milk
- 1/2 tsp. garlic powder
- 1/4 c. minced white onion
- 1 Tbs. oil
- 2 c. frozen hash browns, thawed
- 1/2 lb. bacon, cooked and crumbled or 6 sausage links cooked and sliced
- 8 oz. shredded cheese
- Salt pepper and other seasoning of choice
Line a large ovensafe pan with foil and set aside.
Scramble the eggs with the milk, garlic, onion and seasoning. Set aside.
Pour the oil into the pan and add the hash browns. Place in a preheated 425 oven and cover. After 5 min. stir the hash browns and add the meat.
Cover and cook for 5-7 min. Stir and add the scrambled egg mixture. Cover and cook for 5-7 min longer.
Stir and cook for 5 more min.
Sprinkle the cheese over the top, cover and cook for 2-4 min.
