Ingredients
- 1 # butter, softened
- 1 # brown sugar
- 6 eggs, separated
- 4 c all purpose flour
- 2 c pecans, chopped
- 1/2 # candied cherries, chopped
- 1/2 # candied pineapple, chopped
- 1 tsp baking powder
- 1 1/2 oz lemon extract (pure)
Preparation
Step 1
Cream butter, brown sugar and add egg yolks one at a time. Sift flour and baking powder and add 2 cups alternately with lemon extract. Cut up fruit and toss with remaining 2 c of flour. Add to mixture. Beat egg whites until stiff. Add to mixture. Place in greased and floured tube pan that has been lined with wax paper. Let stand, covered, at room temperature over night..Bake the next morning for 3 1/2 hours at 250*. Cool before removing from pan.
